Water Kefir

HOW TO PREPARE WATER KEFIR?

STEP 1

Put the water kefir grains into the jar and fill it with fresh, non-chlorinated and non-filtered water. Add sugar and dried fruits (optional).

STEP 2

Open slightly the top lid of the jar in order to allow the air flow needed for the fermentation. Leave it at room temperature for about 1-2 days.

STEP 3

When the process of primary fermentation is finished (after approximately 1-2 days). Remove the top lid and strain the kefir into glass jar/bottle. The grains will remain in the Kefirko jar.

STEP 4

After the kefir is strained you can add some fruit juice or squeeze fresh citrus juice into the water kefir. You can seal the bottles and leave it in the fridge for another day for second fermentation.

WHEN AND HOW SHOULD I ADD MORE MINERALS TO MY WATER KEFIR?

Kefir grains need minerals to thrive. Sometimes there is enough minerals in the water you use, other times it’s necessary to add them.

WHEN YOU MAY NEED TO ADD MINERALS:during activation of the kefir grains,when grains are not growing,when kefir does not ferment in over 48 hrs.WHAT MINERALS CAN I ADD?Baking soda – less than a teaspoon.Molasses – less than a teaspoon.Unrefined sugar – to replace part of white sugar.Mineral drops – few drops per liter.

HOW TO PREPARE MILK KEFIR?

STEP 1

Put the grains into the jar and add the appropriate amount of milk – The measurement lines mark 300 ml/10 oz (approximately one serving). 

STEP 2

Open the top lid of the jar slightly to allow the air flow needed for the fermentation. Leave it at room temperature for about 24 hrs. The primary fermentation is finished when the milk becomes thicker and sour in taste. 

STEP 3

When the process of primary fermentation is finished (~ 24 hours), remove the strainer lid and use swizzle stick to gently mix produced kefir. This will help you strain it. Put the strainer lid back on the jar. 

STEP 4

Apply the scrapper tool on the strainer lid and strain the kefir into jar, turning the scrapper in half-circle motion in the process. The grains will remain in the glass jar and strained kefir is ready for second fermentation or immediate use. 

HOW TO ACTIVATE MILK KEFIR GRAINS?

1. Pour small amount of room temperature milk in glass jar and add milk kefir grains from the bag/container.

2. Leave to ferment for 24 hours.

3. Strain the grains and discard milk.

4. Wash the grains with lukewarm non-chlorinated water and repeat the first step.

5. Change the milk every 24 hours, until it starts fermenting kefir.

6. Once you are satisfied with kefir, use more milk for fermentation.

HOW TO REVIVE KEFIR GRAINS?

Always follow the instructions from the manufacturer when you’re buying kefir grains. Usually it takes a few batches for grains to acclimatise to your environment and ingredients.

ACTIVATION OF GRAINS

When you got the grains as a gift or someone from sharing communities like Kefirhood send them to you, you should activate the grains too. Make sure to ask the person who gave you the grain for as much information regarding the fermentation of these grains in the past as you can. What kind of milk/water was used? What temperature they were fermented on? How often were they fermented? For how long were they inactive.This will help you acclimatize the grains faster. Try copying the information with your fermentation as much as you can at the beginning. If you want to make some changes (use coconut milk instead of cow etc.) do that a bit later, when grains become fully active and do it slowly not to shock the grains.

ARE GRAINS FOR WATER AND MILK KEFIR DIFFERENT?

Kefir grains consist of proteins, polysaccharides and a mixture of several types of microorganisms, such as yeasts and aroma and lactic-acid forming bacteria proven highly beneficial to humans.

MILK KEFIR OR BÚLGAROS IS A RESULT OF THE INOCULATION OF MILK WITH MILK KEFIR GRAINS.

Prepare milk kefir …

We use milk kefir grains to make milk kefir and water kefir grains to make water kefir. The milk kefir grains are small white blobs that look a lot like cauliflower florets.

… OR WATER KEFIR!

Water kefir, also known as tibicos, is a result of the inoculation of sugary water with tibicos (water kefir grains). To make water kefir we need a bit more of water kefir grains than milk kefir grains. The grains are translucent and crystal-like in appearance.

KOMBUCHA

HOW DO I PREPARE KOMBUCHA?

Ingredients for 1 l kombucha:

2 bags of tea (2 tsp tea leaves)50g sugar900 ml water100 ml kombucha starter or SCOBY and 100 ml kombucha from previous batch

To make kombucha you need to prepare ingredients first. Boil one cup of water and put in 2 tea bags or 2 tsp of tea leaves. Leave for 5 minutes then take out the leaves or tea bags. Cool down and stir in 50g of sugar. You can use honey if you are preparing jun kombucha. Pour into the glass jar and dilute with remaining water. Add starter or 0,1 l of kombucha from previous batch and SCOBY. Leave to ferment as per manufacturer instructions, 7-14 days.

WHEN USING KOMBUCHA STARTER …

If you are using the starter, pour in the 0,1 l of starter into the sweetened tea (900 ml). The scoby will start to form during the first fermentation. You have to leave it to ferment a bit longer, for 10-14 days.

Always save 0,1 l of ferment or 10% of the amount you are planning to prepare. It’s used for storing the scoby and for preparing the new batch.

HOW TO MAKE KOMBUCHA WITH KEFIRKO KEFIR MAKER

WHAT ARE THE BENEFITS OF DRINKING KOMBUCHA?

Kombucha is a probiotic drink made with fermentation. As with other probiotic drinks, it’s best if it’s homemade with hand picked ingredients.

PROPERTIES OF “TEA OF LIFE”

Studies have shown that it has bioactive components with antioxidant and detoxifying effect. It also shows antimicrobial properties because of the low pH, around 2.5. Low pH is not the only reason for antimicrobial impact. The natural polyphenols in tea, bacteriocins and protein structures also play a role in this.

BENEFICIAL PROBIOTIC DRINK

These support the claims that this beverage has a befinical effect on overall immunity, mental health and even cancer or cardiovascular disease prevention. Probiotics in kombucha aid with gut health and general well-being. Supposedly it has positive influences on immunity, obesity, cardiovascular disease, atherosclerosis, hypertension, anemia, pulmonary disease, antioxidant capabilities and cancer prevention.

CHEESE MAKING

WHAT DO I NEED TO PREPARE KEFIR CHEESE?

To prepare kefir cheese you need kefir and supplies. You can use a Kefirko Cheese Maker – a kitchen tool designed to prepare homemade kefir cheese. It includes a mesh basket where the kefir is straining. We designed it to achieve slow straining to ensure solids stay in the basket even though the whey strains out. The mesh basket is attached to a glass jar that enables preserving the whey – the liquid that strains out.

HOW LONG DOES IT TAKE TO PREPARE KEFIR CHEESE?

If you are making kefir cheese from scratch, you have to make the kefir first. It takes 12-24 hrs for kefir to ferment. Then you strain the kefir, you can strain it directly into the Kefirko Cheese Maker. Also, it depends what kind of consistency you are looking for in your kefir cheese. The longer the kefir strains, drier and thicker is the cheese. Here are the estimates for the time of straining. Note that the consistency of your cheese also depends on individual ingredients and temperature.

TIME OF STRAININGFew hours for a thicker kefir that can be used for dips.Overnight for creamy cheese.1-2 days to get semi-hard cheese.

To get semi-hard cheese you can also use the pressing spring with disc to ensure all the whey strains out.

There are many different options to use kefir on our skin. From facial masks to soaps. Therefore the natural homemade kefir soaps are made with extra care to preserve the probiotic value. An addition to healthy diet rich with fermented food, kefir soaps can be used every day.
