Kombucha is a fermented drink that we prepare with black/green tea, sugar and symbiotic culture of acetic acid (vinegar), bacteria and yeast known as SCOBY.
SCOBY is a type of tea fungus, short for symbiotic culture of bacteria and yeast. This is a formation that develops on the contact surface where liquid meets air. Together with small amount of kombucha liquid it is used to prepare kombucha.
Kombucha tastes a little sour or vinegar-like. It is known for its energising and detoxifying properties.v
