What is a SCOBY?
A SCOBY is a kombucha culture...
...also known as the Symbiotic Culture of Bacteria and Yeast. It is gelatinous and formed where liquid meets air. It is also known as the kombucha mother.
The best thing about the SCOBY is that it is packed full of goodness and with the addition of kombucha liquid, can be used (and reused) to prepare your kombucha drink.

'What does a SCOBY look like?'
They may not be very attractive but they are full of probiotic goodness! A SCOBY looks very much like a gelatinous pancake. The SCOBY can be thick or thin (depending on the acidity during development and how long it is left to develop). SCOBY usually has the look of a pancake or circular disc, but the SCOBY will take on the shape of the container it has been placed in.
'Can you eat a SCOBY?'
It may not look very tasty, but the SCOBY is packed full of bacteria and yeast cultures - where most of it's health benefits are said to derive. Studies have suggested a link between SCOBY and improved gut health and digestion.
The SCOBY has a pretty mild taste and as you would guess, it tastes a bit like kombucha. Much more exciting is the texture - which can only be described as chewy or gummy!
